  • 3 pounds boneless pork loin roast
  • 3 cloves garlic
  • 1/2 teaspoon salt
  • 8 ounces diced green chili peppers
  • 1/4 cup chipotle sauce
  • 3 1/4 cups water
  • 1 1/2 cups uncooked long grain white rice
  • 1/4 cup fresh lime juice
